Kale and Quinoa Salad with Lemon Oregano Dressing

Kale and Quinoa Salad with Lemon Oregano Dressing

(Inspired by Zupas!) 

This salad is one of my absolute favorites because it's delicious and packed with a nutritious punch! If you are a breastfeeding mama, this is such an awesome supply boost because it is loaded with iron, complex carbohydrates, antioxidants, all the right vitamins and protein.  Eat it as a side dish or a full meal. 

 

What you'll need: 

    • About 5 kale stalks, taken off grind and chopped
    • 1 cup cooked quinoa 
    • 1 cup halved red grapes
    • 1 cup fresh blueberries, rinsed
    • 1/2 cup pistachio
    • 1/2 cup shredded or shaved Parmesan cheese
Lemon Oregano Dressing
  • 2 Tbsp fresh lemon juice (about 1 lemon)
  • 1 Tbsp raw honey
  • 1 tsp dried oregano leaves
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup olive oil

 

Instructions:

Cook Quinoa (how to video below) and allow to cool. Message chopped kale. Add kale, quinoa, pistachios,  Parmesan, blueberries and grapes to large bowl. Mix dressing ingredients well in a bowl or blender and pour over salad. Toss well and ENJOY!
